Big K's Summer Kabob Recipe
Ingredients Needed:
-
One (1) pack of Chicken Thighs
-
one (1) large container of Yogurt
-
one (1) Onion
-
one (1) Lemon
-
one (1) head of garlic
-
One (1) bottle of olive oil
-
Seasonings: One (1) bottle of big k's rub, salt, pepper, and red pepper flakes.
Step 1: Prepare rub
In a medium sized bowl combine your choice of Big K's Rub, olive oil, yogurt, lemon juice, salt, pepper, red pepper flakes, and Big K's Rub.
Step 2. Mix Ingredients
Stir ingredients until you get a thick creamy consistency. Cover ingredients in bowl and then put into the fridge until ready to use.
Step 3. Prepare Chicken
To prepare the chicken, cut off any fat then cut the chicken into bite-size pieces. The pieces need to be large enough to be able to put on a wooden skewer.
Step 4. Prepare kabobs
Put the wooden skewers through the prepared chicken pieces. You can also add any additional vegetables on the skewer such as peppers, onions, and other ingredients of your choice.
Step 5. Marinate Kabobs
To Prepare your kabobs, start by prepping a sheet of aluminum foil on a metal pan. Then take the marinade from early and liberally brush the marinade all over the kabobs. Cover the kabobs and let sit overnight for at least 10 hours.
Step 6. Time to Grill
Time to cook those kabobs! Prepare your grill by preheating to a medium-high heat. The key indicator of when they are done is the golden brown finish throughout the kabob. Remember, we want to ensure chicken is always cooked through adequately.
Enjoy!
You can serve this dish with many sides, however the most common is yellow rice, with a side of freshly cut vegetables.
